In part II of the the de'Medici Kitchen series, renowned cooking teacher Lorenza de'Medici offers four sumptuous menus for lunch. As we learn about the rich culinary heritage of Northern Italy, four different lunch options are presented. A lunch from Liguria traditionally features bold flavors such as warm salt cod and bean salad, rabbit in caper sauce with basil, and a hazelnut-almond cake. The Roman lunch reveals the secrets of handmade gnocchi, cooked here in tomato sauce served with lamb fricassee, green beans and roasted hazelnuts, and fresh ricotta with warm honey for desert. A traditional midday meal consists of skillet-fried flat bread topped with prosciutto, meatloaf stuffed with hard-boiled eggs, and sautéed spinach sprinkled with amareto cookie crumbs. The final meal is a summer buffet, after which a visit to Italy's smallest pasta factory is presented. The summer buffet is a light menu and features linguine with roasted peppers, ham mousse with melon sauce, and peaches poached in red wine and stuffed with amaretto cookies. These authentic regional dishes are beautifully presented by a real culinary master.
